Macaron Recipe with Almond Meal (Flour)
Making macarons with almond flour requires some attention and care, but if you follow the correct steps, you can achieve successful results. Here is a step-by-step recipe for making macarons with almond flour:
Ingredients:
- 100 grams egg whites (about 3 egg whites)
- 100 grams granulated sugar
- 200 grams powdered sugar
- 120 grams almond flour
- A pinch of salt
- Optional: Food coloring (to color the macarons)
Preparation:
1. Preparing the Egg Whites: Bring the egg whites to room temperature. The fresher the egg whites, the better the results you will get.
2. Almond Flour and Powdered Sugar: Process the almond flour and powdered sugar in a food processor until finely ground and then sift through a fine sieve. This ensures the macarons will be smooth.
Instructions:
1. Making the Meringue: Start whipping the egg whites with a pinch of salt at low speed. When they begin to foam, gradually add the granulated sugar. Continue to beat until the mixture forms stiff and glossy peaks.
2. Adding Dry Ingredients: Gently fold the almond flour and powdered sugar mixture into the meringue. Be careful at this stage. Fold the mixture with a spatula until the batter flows slowly and heavily from the spatula (lava consistency).
3. Adding Color: If you want to make colored macarons, add food coloring at this stage and mix until you achieve a uniform color.
4. Piping: Transfer the mixture to a piping bag and pipe rounds about 3-4 cm in diameter onto a baking sheet lined with parchment paper. To smooth the tops of the piped macarons, tap the baking sheet a few times on the counter.
5. Drying Time: Let the macarons dry at room temperature for about 30-60 minutes. The macarons are ready to bake when they do not stick to your finger when touched.
6. Baking: Preheat the oven to 150°C (300°F). Bake the macarons for about 12-15 minutes. The edges of the macarons should rise slightly, but their color should not change much.
7. Cooling: Leave the macarons on the baking sheet to cool completely after removing them from the oven.
Filling:
You can use various fillings for your macarons. The most common fillings include ganache, cream cheese filling, or jam. Here is a simple chocolate ganache recipe:
Chocolate Ganache:
- 100 grams dark chocolate
- 100 ml cream
- Heat the cream in a small saucepan but do not boil it.
- Break the chocolate into small pieces and add it to the hot cream.
- Stir until the chocolate is completely melted and leave it to cool to room temperature.
- Once cooled, use a piping bag to pipe the ganache between the macarons.
Let your macarons rest in the refrigerator for a day before serving. Enjoy!
